Rempah Titek

Rempah Titek is the basic Peranakan spice mix. It's used to make sambals, kari kapitan and other spicy Peranakan dishes. Different Peranakan cooks use different proportions of spices, but the spicing is largely the same. To cater to a larger variety of dishes, leave out the candlenuts. These can be ground in later on if you need them.


3 cloves garlic

1 tsp belacan

1 medium onion

6 shallots

6 pieces candlenuts

4 fresh red chillies

4 dried red chillies


Combine ingredients and grind finely. Rempah titek will keep for months in the freezer. Thaw out the amount that you need each time.
