Sambal Sotong

This is a very nice squid dish, but serve it quickly before the flour on the squid gets too soggy.


Nonya Sambal

2 large squids (calamari), cleaned cut into rings

Oil for deep-frying.


1 tbsp assam pulp, dissolved in 1/4 cup of hot water

1 tsp sugar

1/4 tsp salt


Flour Mix

6 tbsp plain flour

1 tbsp cornstarch

1 tsp sugar

1/2 tsp salt


1. Marinade squid rings for 1/2 hour.

2. Remove rings from marinade and dab as dry as possible with kitchen towels.

3. Combine flour mix.

4. Toss rings in flour mix.

5. Heat oil over high heat until oil is very hot. Reduce to medium heat and toss in rings. Deep fry till crisp.

6. Place deep-fried rings into pan, add sambal and stir briefly over medium heat.
